Korean Scallion Pancakes (Pa Jun)

I was invited to a friend’s house for a potluck and decided to make my Crock Pot Korean Short Ribs  and since then I have been thinking about Korean food, and why not, I am Korean.

Scallion, or green onion, pancakes are a favorite starter on any Korean menu. I have never made these before but decided to give them a try and they turned out quite lovely. Here is my recipe.

What you will need:

1 bunch scallions, trimmed/halved and cut into 2-3 inch pieces

2 c all-purpose flour

1.5 c H20

2 eggs, beaten

1 teaspoon salt

Vegetable Oil for cooking

What you will do:

1. Combine all the ingredients in a mixing bowl and let rest for about 10 minutes

2. Over medium/high heat warm non-stick skillet. Add a little of the vegetable oil and warm.

3. Add desired amount of batter in a thin layer and cook for about 3-4 minutes or until golden brown on the first side, then flip and cook for another 3-4 minutes or until golden brown.

4. Once pancake is cooked, rest on some kitchen towel to drain excess oil. Cut into triangles (like you would a pizza) and transfer to serving dish.

** For the spicy dipping sauce: 1/4 c light/low sodium soy sauce, 1/4 c rice vinegar, 1/8 c sesame oil, 1 T red chili flakes, 1 T finely minced garlic, 2 T chopped scallions. photo 2_2

These Korean green onion pancakes are super easy to make with a delicious outcome. The batter can be make ahead of time and stored in the fridge until you are ready to cook them. You could also cook off the pancakes and then heat them on a rack in the oven to re-warm if you are serving at a party and want to get a lot of the prep out-of-the-way ahead of time.
