Grilled Skirt Steak Tacos Recipe

Last Sunday, the Husband phoned from work and asked if I wanted to meet him at his Mom’s when he got off. He said his brother and his wife were there watching football and cooking dinner. Though I am not a big football fan, I am a big fan of food and it would be nice to see my in-laws. My brother-in-law barbecued some skirt steak and shrimp for some soft shell tacos. They were delicious.

On my weekly trip to the market I saw some skirt steak at the meat counter, and without knowing exactly what I would season it with, I bought it. After reading up on skirt steak, I found a recipe that did a dry rub with cumin, salt and pepper. I have used cumin before and thought it sounded like a good rub. The recipe also had a cilantro sauce that I tweaked a little. Below is my recipe for this delicious dinner.


What you will need:

1-2 lbs of skirt steak, fat trimmed

(for the dry rub)

1 tsp cumin

1/2 tsp fresh black pepper

1/2 tsp salt


(for the sauce)

1-2 cloves of garlic

2 T fresh lime juice

1/2 tsp fresh black pepper

1 bunch of cilantro (just the leaves)

1/4 cup olive oil


What you will do:

1. Trim fat from skirt steak. Mix cumin, salt and pepper (dry rub) and sprinkle on meat, and pat down. Let meat come sit with the rub while preparing the sauce.

2. Prepare the sauce. In mortar (if you don’t have a mortar and pestle use a blender to make the sauce), add garlic, salt, pepper, lime and muddle. Slowly incorporate the olive oil until smooth. Taste and adjust seasoning if necessary. Set aside.

3. Heat a lightly oiled grill pan over high heat. When pan is hot (but not smoking) add skirt steak. Depending on the size of your meat and the wellness you prefer, cooking times will vary. I cooked this for about 8-10 minutes for a medium doneness.

4. Let meat rest for at least 5 minutes so the juices can redistribute, slice, and drizzle sauce over and serve.


We did a DIY soft taco construction. I just heated up the corn tortillas, added the meat, drizzled the sauce and topped it with shredded cabbage and a lime wedge. Absolutely simple to do and delicious in the belly. Skirt steak is a wonderful meat that has infinite possibilities with seasonings. If you see it, ask your butcher for a piece and give it a try.
