Korean Side Dishes: Cucumbers & Chives

Part II: Cucumber and Chives

What you will need:

1/2 English cucumber thinly sliced and halved (I use the 1/16 setting on the mandolin)

1/2 c onion chives, 1 inch pieces

2T red pepper powder

1 T fish sauce

1 T apple cider vinegar

1 tsp sugar

1 T black sesame oil

1 T toasted sesame seeds

What you will do:

1.  In a bowl, mix the red pepper powder, fish sauce, vinegar, sugar, and sesame oil and mix to create dressing.

2.  Add the cucumber and chives and toss in dressing.  Add sesame seeds and done!
