Part III: Stir-fried Potato & Carrots with kimchi sauce
What you will need:
1 small potato, sliced into matchsticks
1 carrot, sliced into matchsticks
1/4 yellow onion, sliced
1 jalapeno, seeded and sliced into matchsticks
1 1/2 T ground nut oil
1 tsp minced garlic
1/2 tsp salt
1-2 T water
1 T toasted sesame seeds
What you will do:
1. In a wok, heat cooking oil and add garlic. When garlic gives off aroma, add the potatoes, carrots, onions, jalapeno and salt.
2. Add the kimchi sauce, and continue to stir-fry until veggies are cooked. Add water to steam. When veggies are tooth tender they are done. Transfer to serving dish and top with sesame seeds.
