Backyard BBQ for Dad

Last night the Husband and I had my parents, my brother and his Mom over for a Father’s Day dinner. We have been grilling a lot lately so I figured I would come up with a menu that could be done on the grill. For my Dad’s day dinner we had a grilled vegetable salad, grilled corn on the cob and grilled skirt steak tacos with a chimichurri or mango salsa. Here are some of the photos from our dinner.

On Saturday, I went to my local farmer’s market and found some gorgeous eggplant, squash and bell peppers. Perfect for the grill!

I prepared the veggies by washing them, slicing them in half and brushed them with olive oil and balsamic vinegar and sprinkled with salt, pepper and fresh thyme. Almost “thyme” for the grill (hahah cheesy!)

On the charcoal grill, the veggies took about 5-8 minutes. When they were soft and had a nice char it was time to remove them from the grill and slice for the salad.

And now introducing…the skirt steak. I marinated the skirt steak for about 5 hours with garlic, salt and pepper, cumin and light soy sauce. TIP: I like to remove the meat from the fridge while the coals are heating up. Taking the chill off the meat will help even cooking and achieving the perfect temperature.

Always let your meat rest for at least 5 minutes but a little longer is better. You do not want to cut the meat straight away because all the juices will run out. Letting the meat rest will give the meat’s juices a chance to redistribute ensuring juicy meat.

My sister-in-law Charlotte posted a picture of the most gorgeous corn online the other day. It was my inspiration for my grilled corn brushed with a cilantro and green onion butter.

For the butter: Let one stick of unsalted butter come to room temperature to soften. Meanwhile, chop 4 green onion and 1 bunch of cilantro. When the butter is soft, mix with the green onion and cilantro and a little salt and pepper. When the corn comes off the grill brush with the butter. This is amazingly delicious!

The dinner table. We had a fantastic meal and fantastic company. My Mom told me that earlier in the day she and my Dad were getting a coffee and ran into someone they knew who asked them what they were doing for Father’s Day, and my Dad in his proudest voice said, “I am going to my daughters house, she is cooking me dinner.” Awww….love it!
