Blackberry and Brie Stuffed Puff Pastry Bites

Once I was introduced to Pinterest I was hooked!  I mean, I would spend hours upon hours on Pinterest and wonder why my Husband was coming in from work when it felt like I had just said goodbye to him.  Well, Pinterest is an amazing avenue to find the greatest things on the internet and share with others.  

The other day I came across these cute little puff pastries filled with blackberries and brie cheese.  Now, for those of you who know me know that I am NOT a baker but I figured with buying the puff pastry vs. making my own, I could manage this recipe.  So, here is my version of Blackberry and Brie Stuffed Puff Pastry Bites.

What you will need: (this recipe yielded 9)

1 sheet of puff pastry, thawed and cut into 9 squares

18 blackberries (frozen are okay, just thaw first)

2-3 T blackberry jam

4 oz brie cheese cut into small squares

Flour for dusting

Egg wash (1 egg, 1-2 T water, slightly beaten)

What you will do:

1. Pre-heat oven to 400 degrees F.  Butter a baking dish or line with parchment paper.  

2.  Cut puff pastry into 9 squares.  In each square put one piece of brie, 2 blackberries and a dollop of blackberry jam.  With the egg wash, wet the edges of the puff pastry squares and fold together at the edges, bringing opposite corners together and giving a light squeeze to get the edges to stick.

3.  Bake for 15-17 minutes or until golden brown.  Drizzle with honey (not in original recipe) and serve warm.

As you can see, I experimented with the shapes of my bites.  I would have to say the most successful was folding opposite corners together like a little parcel.

After I made these I started thinking about other fillings.  Next time I will try blue cheese, figs and honey but the possibilities are endless.

Puff pastry can be found at most grocery stores in their frozen dessert section.  It comes in a long rectangular box and usually has two sheets inside.
