Butternut Squash Soup Recipe

Hey Everyone! I know it has been quite some time since I have posted a recipe but I am back and am offering THE easiest recipe for Butternut Squash Soup. This soup is great anytime of the year, so without further adieu here it is!

What you will need:

2 lb butternut squash, peeled, seeded and cubed
1 Granny Smith apple, peeled, cored and cubed
1/2 medium yellow onion, diced
2 1/2 cups of low sodium chicken broth
2 cups water
Salt and pepper to taste
Grated nutmeg, to taste
1 T olive oil

What you will do:

1. In a heavy bottomed pot, heat the olive oil over medium heat. Add the onion and sautée until translucent (about 6-8 minutes).
2. Add the cubed squash, the apple, salt, pepper and ground nutmeg. Give a good stir. Add the chicken broth and the water. Cover and turn heat to medium low and let simmer until squash is soft (about 30-40 minutes, depending on size)

3. With either a hand immersion blender or food blender, blend the squash until smooth. Taste and adjust any seasonings.

*optional* you can also add some heavy whipping cream but I personally don’t think this soup needs it, but up to you!!

Viola! Easy peasy! This recipe yields about 4 bowls of soup.

  1. Tried this recipe the other day! It’s really good and easy! Substituted nutmeg for spices and a little cumin. Also added croutons 😉 thanks for sharing Fay
