Soy and Ginger Couscous

Couscous, the food so nice they named it twice!

This past weekend my friends and I hosted a baby shower for our friend Mei. Me, Mei and our other friend Seng are all having babies this year (well my little guy is here already) but back to the baby shower…I did all the food and for one of the side dishes I made an Asian flavored couscous and it was a huge hit! So, of course, I must blog about it, right?!?!

What you will need:

1 c whole wheat couscous
1 c shelled edamame
1 c shredded red cabbage
1/2 c shredded carrot
1 red bell pepper, diced
1 c English cucumber, quartered
1/2 bunch of cilantro, chopped
4 green onions, chopped

For the dressing:

1/4 c light soy sauce
1/2 T grated ginger
1 T sesame oil
1 T rice vinegar
1 T toasted sesame seeds
1/4-1/2 teaspoon of red chili flakes (optional)
Salt and pepper to taste

What you will do:

1. Cook couscous according to package instructions (1 c boiling water and pour over couscous + 2T butter or olive oil, stir, cover and let sit for 5 minutes, fluff with fork)

2. Meanwhile, make the dressing and set aside. In a bowl, add the couscous, the veggies (minus cilantro and green onions) and toss with dressing

3. Transfer to serving dish and garnish with green onions and cilantro.

This dish is super easy and is guaranteed to be a hot at your next dinner/party, or in this case, baby shower!
