Pickled daikon is a popular side dish in Korean cuisine. Here is my super simple recipe for this yummy side.
What you will need:
A medium sized daikon, shredded into thin strips
1/2 c apple cider vinegar
3 1/2 T white sugar
1 T Korean chili flakes (gochugaru)
What you will do:
1. Shred daikon and mix with vinegar, sugar, and chili flakes. Mix well, taste and adjust seasoning as needed.
Done! I told you it was easy! The pickled daikon can be eaten straight away or chilled for a couple hours before serving, your choice.
