Gochujang & Cilantro Coleslaw

I am always looking for shortcuts now that I am a new (well, my boy is almost 10 months) Mom.  This morning my little guy and I went to my parents for our weekly visit, but before we did I put on our dinner for tonight.  I threw some pork into the crockpot and added a Korean marinade and set it low and hit the road.

When we got home I made this simple slaw to go with the pork on the sandwiches I planned to make.  This slaw is simple cabbage with cilantro and some Korean seasonings.

What you will need:

Shredded cabbage (about 2 cups)

1/2 bunch of cilantro, chopped

Black toasted sesame seeds, for garnish

1 1/2 T of your favorite mayonaise

1/2 T Korean gochujang paste (Korean chili paste)

1 T toasted sesame oil

1 T rice wine vinegar, or apple cider

1 tsp granulated sugar

1.  In a bowl, add the mayonaise, gochujang, sesame oil, vinegar and sugar.  Whisk to incorporate ingredients.  Add the cabbage and the cilantro and toss to coat.  Taste and adjust any seasonings.  Garnish with the toasted sesame seeds and serve.

I am using this for my Korean pulled pork sandwiches but this can be used as a side dish, for Korean or Asian tacos, or in addition to a salad.  The possibilities are endless!

So easy, right?
