Kimchi Soup with Tofu and Pork Belly 

I have been a little under the weather lately with a seriously sore throat and for some reason all I want is spicy food.  Maybe it is because it numbs my throat or maybe because it is so spicy it makes me temporarily forget about my pain, ha ha.  But regardless, I love spicy food and I love Korean food so this dish was a perfect blend of the two! My version of Korean kimchi soup.

What you will need:

2 cups of kimchi, chopped

2 T gochujang paste (Korean hot pepper paste)

1/2 pound pork belly, cubed and fat trimmed

1/2 block of firm, or extra firm tofu cut into cubes

3-5 green onions, cut into 1 inch pieces

5 cups of water, or enough to cover

What you will do:

1.  Prep all ingredients.   Rinse pork belly under cold water, pat dry, trim fat and cut into cubes. Cut kimchi, green onions and tofu (always drain tofu and rinse under cold water). 

2.  In a shallow sauce pan, add the kimchi, pork belly, and gochujang.  Add water and heat over high heat until it comes to the boil.  After about 10 minutes, turn to medium/low and let simmer another 20 minutes.  At final 5 minutes of cooking, add tofu and green onions and stir to incorporate.  

3.  Serve with your rice of choice and enjoy! 

This is probably one of the easiet Korean dishes out there.  Perfect for a sore throat, a hot day, a cold day or just about any time!
